Italian Zucchini Crescent Pie

My Papou (Greek for grandfather) first made this for me many years ago, and I enjoyed it so much, I had to make sure I got the recipe for it. When we get zucchini, this is one of the first things I make with it.  It’s like a quiche, but there is not a whole lot of eggs in it like a quiche, but there is plenty of cheese.  The crescent roll crust is perfect and gives it a nice buttery flavor too.

 

Italian Zucchini Crescent Pie
Serves 6

What you need:

1/2 cup butter or margarine
4 cups thinly sliced, unpeeled zucchini
1 cup onion, diced
1/2 cup chopped fresh parsley or 2 Tbsp dried parsley flakes
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp dried basil
1/4 tsp dried oregano
2 eggs, well beaten
2 cups shredded mozzarella cheese
8 oz can Pillsbury refrigerated crescent rolls
2 tsp dijon mustard, optional

How to make it:

Preheat oven to 375 F.  Grease or spray a 9″ deep dish pie dish.

In a medium skillet, melt butter or margarine.  Add zucchini and onion, and cook until tender.  Stir in seasonings and remove from heat.  In a large bowl, mix together the eggs and cheese.  Stir in zucchini mixture.

Separate crescent roll dough into the 8 triangles.  Press into the pie dish, covering bottom and sides (see picture below).

 

If using, spread the crust with mustard.  Pour the zucchini/egg mixture evenly pie dish.

Bake in the preheated oven for 18-20 minutes, or until a knife inserted in the center comes out clean.  If crust starts to become too brown while baking, cover the sides with foil.  Let stand for 10 minutes before serving.  Cut into 6 wedges.

Easy Cheesy Zucchini Bake

I was not feeling up to cooking much earlier this week, so tonight was time to do some catch up.  I had gotten Mexican grey squash in my Mexican pack, and still had some yellow squash to use, so since the grey squash is similar to zucchini, I found this recipe for Easy Chessy Zucchini Bake.    I think it turned out pretty good, I think the grey squash made it a little watery, but over all good.  I think next time I will put some mozzarella on top with the Parmesan.  I used grated Parmesan on top, but I think it might have been better with both grated Parmesan and shredded mozzarella.

 

Easy Cheesy Zucchini Bake

What you need:

2-3 zucchinis, sliced or cut in half moon slices
2-3 yellow squash, sliced or cut in half moon slices
1/2 bunch green onion, diced
1 Tbsp Italian blend seasoning
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese

How to make it:

Preheat oven to 350 F.  Toss together the zucchini, yellow squash, green onion, seasoning, and mozzarella cheese.  Spray an 8×8 baking dish, and place the zucchini mixture in the dish.  Bake for 25-30 minutes.  Sprinkle with the Parmesan cheese (here is where I would also put mozzarella cheese on top, probably about 1/4 cup).  Bake for another 10-15 minutes, or until zucchini and yellow squash are tender and cheese is browned.

Sausage, Zucchini, and Tomatoes over Rice

I had been intending to make egg rolls, but still hadn’t had a chance to get everything I needed.  So, I needed a quick dinner using something else I had on hand.  I had bought Italian sausage and some zucchini that was on sale over the weekend, so I decided to make a dinner I haven’t made in a long time, sausage, zucchini, and tomatoes over rice.  My good friend and former neighbor introduced me to this dinner and we love it!  Plus, it really is quite easy.

Note: This is 2 packages of sausage since I have 3 adults and 2 kids in the house to feed.

What you need:

1 package of Italian sausage, mild or hot, depending on your taste
1-2 zucchini, diced
1 can flavored tomatoes, I use basil, garlic, and oregano diced tomatoes
Cooked rice

Remove the casings from sausage and break up.  Cook until all the sausage is browned.  Add in zucchini, cook about 5 minutes, or until it becomes tender.  Add in the can of diced tomatoes, and let simmer for 5-10 minutes.  Serve over cooked rice.
