Chicken Salad

There really are a LOT of different ways that chicken salad is made. So, when my husband wanted Chicken Salad, I wasn’t sure where to start. Sure, I could just do chicken, mayo, maybe some onion. I have played around with it a couple of times, and finally found the combination that he, my older daughter, and I can all agree on…and here it is!

Chicken Salad

What you need:

4 cups cooked chicken, diced
1 cup celery, diced
1 bunch green onions, diced
1 1/2 cups mayo
1 tablespoon spicy brown mustard
1 tablespoon fresh dill, minced or 1 teaspoon dried dill

How to make it:

Add all ingredients to a large bowl. Mix well. Chill for several hours or overnight.

Meatballs in Creamy Dill Sauce

This dish was inspired by the other part of Jamie Oliver’s 15 Minute Meals.  His dish was Swedish Meatballs with Celeriac and Spinach Rice.  I liked that he used dill, since I had some fresh dill on hand.  I looked at some other recipes online, and created a blend of a few different meatball recipes.  This was really, really good.  Everyone liked it, and there really wasn’t much leftover.

Below, I have the recipe for the meatballs and sauce.  I served it over rice with spinach, but mashed potatoes or egg noodles would work well with this too.  For the rice, I cooked the rice in my steamer, then put in a large bowl when it was done.  I quickly added chopped spinach to it while still very hot, mixing well.  That way, I got a vegetable in!

Meatballs with Creamy Dill Sauce

What you need:

2/3 cup dry breadcrumbs
1 cup milk
1 pound ground beef
1/4 cup grated onion
2 tablespoon fresh dill
2 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil
6 tablespoons butter
1/3 cup flour
1 quart beef stock
1/2 cup cream, half and half, or milk
1/4 cup fresh dill

How to make it:

In a large bowl, soak breadcrumbs in the milk for a few minutes.  Mix in onion, 2 tablespoons dill, ground beef, eggs, and salt and pepper.

Heat olive oil in a large skillet over medium high heat.  Roll ground beef into 1″ balls.  Add to the heated skillet and brown each meatball on every side, in batches if necessary.  When browned, remove to a plate.

Reduce the heat to medium low and melt butter in the skillet.  Mix in flour.  Cook, stirring often, until you have a brown roux.  Whisk in beef stock, then cream and 1/4 cup fresh dill.  Add meatballs into the sauce.  Cover and turn heat down to low.  Cook for 10-15 minutes, or until meatballs have cooked through to an internal temperature of 160 F.

Refrigerator Dill Pickles

Recently, I’ve been able to get fresh dill in my Sunizona Family FarmBox.  Cucumbers have also been available through them, and on sale at the grocery store.  My husband and kids love pickles, and while I had made sweet Refrigerator Pickles before, my older daughter has decided she isn’t real fond of sweet pickles.  So, I decided to try dill pickles.  I am not a pickle fan at all, but I do really like these!

Refrigerator Dill Pickles

What you need:

2 pounds cucumbers, washed and cut in slices or quarters
1 1/2 cups white vinegar
2 cups hot water
1 tablespoon sugar
4 teaspoons salt
2 teaspoons mustard seeds
1 cup chopped fresh dill
4 garlic cloves, peeled and crushed

How to make it:

Make the brine by dissolving the sugar and salt in hot water.  Mix in white vinegar.

Divide the cucumbers, mustard seeds, fresh dill, and garlic between 2 quart size jars.  Shake or stir slightly to get the mixture evenly through the jars.

Pour brine into both jars, making sure the cucumbers are fully submerged.  Tightly cover with lids and place in refrigerator.  Allow to sit for 48 hours, and keep stored in the refrigerator.

Gyros Meatloaf with Tzatziki

Unfortunately, the Greek restaurant we had here in town closed down, and even though there are a few places that serve gyros still, I decided to keep working on my own version at home.  I have made Gyros Burgers before, but wanted to try it as more of a meatloaf than burgers so it could be sliced and put in pita pockets.  Now, the downside to meatloaf is that it takes a while to cook without getting too dry.  So, now, when I have time I can do meatloaf, if I’m pressed for time, I can do burgers.  I also made tzatziki for the first time tonight to go with this.  It was perfect!  My husband is usually not a fan when we get gyros when eating out.  He says it’s too messy, but this was thicker, more dip-like, so it wasn’t dripping all over when eating it.  Tonight, I served it with Sweet Potato Chips, which were a nice compliment to the gyros.

Gyros Meatloaf with Tzatziki

What you need:

Gyros Meatloaf:
1 pound ground beef and 1 pound ground lamb or 2 pounds ground beef
1 small onion
4 cloves of garlic, minced
1 teaspoon dried savory
1 teaspoon allspice
1 teaspoon dried oregano or 2 teaspoons fresh oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Dash of ground cumin

Tzatziki (original recipe with more step by step pictures at Daily Cynema:
24 oz container plain Greek yogurt
1 seedless cucumber, peeled
3 cloves of garlic, crushed
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon dried dill weed
1 teaspoon salt
Ground black pepper to taste

How to make it:

Put the onion in a food processor for a few seconds.  Remove into paper towels and squeeze out excess liquid.  Place onions in a mixing bowl, and stir in remaining meatloaf ingredients.  Cover and refrigerate for 1 hour.

Preheat oven to 325 F

Put the meat mixture back into the food processor and process for about a minute or until mixture becomes like a fine paste.  Press meat mixture into a 9 x 5 loaf pan, making sure there are no air pockets.  Place loaf pan in a larger roasting pan, and pour boiling water into the roasting pan until there is enough to reach the middle of the side of the loaf pan, creating a water bath for baking.

Carefully place in oven and bake in the preheated oven for 60-70 minutes, or until meat reaches an internal temperature of 170 F.  Pour out any excess fat, and slice thinly to serve.

While meatloaf is baking, grate the peeled cucumber and squeeze out the excess liquid.  Put in a mixing bowl and stir in remaining tzatziki  ingredients.  Put in a container and keep refrigerated until ready to use (I just returned it to the container the Greek yogurt came in).  Serve with the gyros meatloaf in pita bread with lettuce, tomato, and red onion, if desired.
