Slow Cooker Buffalo Chicken

A while back, I saw a pin on Pinterest of a shredded buffalo chicken sandwich, and the chicken had been cooked in the slow cooker.  A friend had recently made it too, so I know it was something to try out.  It also reminded me of a Buffalo Chicken Pizza that I haven’t made in a while.  I also had a loaf of ciabatta bread in my freezer still, so it was a tough choice to make pizza or to make sandwiches.  So, I made both!

 

Slow Cooker Buffalo Chicken

What you need:

4 boneless, skinless, chicken breasts (about 1 – 1.5 lbs)
1 small onion, diced
1/2 cup hot sauce (I used Frank’s Red Hot Sauce)
2 Tbsp butter

How to make it:

Place chicken and onions in slow cooker.  Pour in hot sauce.  Cook on low for 6-7 hours.

Remove chicken and shred.  Return shredded chicken to the slow cooker.  Stir in 2 Tbsp butter.  Cook on low for another 30 minutes to 1 hour.    Serve on pizza or sandwiches (see below).

 

Buffalo Chicken Pizza

What you need:

1 12-16″ pizza crust, either pre-made, a pouch mix, or your favorite recipe for pizza crust
1/2 cup ranch or blue cheese dressing
1 cup shredded buffalo chicken (either as made above or 1 cup cooked chicken mixed with 1/4 cup hot sauce)
1 Tbsp greens from top of green onion
1 cup shredded mozzarella cheese

How to make it:

Spread ranch dressing on pizza crust.  Next, spread chicken, then green onion tops, then cheese.  Bake according to the directions for your pizza crust, in general, 425 F for 10-15 minutes, or until crust is golden brown and cheese is melted.

Buffalo Chicken Sandwich

What you need:

Shredded buffalo chicken (from recipe at top)
Bread of your choice (I used ciabatta bread from Bountiful Baskets)
Cheese of your choice (I used swiss)
Ranch or blue cheese dressing
Other sandwich toppings, like lettuce, tomato, pickles, red onion, green peppers (I used just lettuce)

How to make it:

Lightly toast the bread.  On the bottom half, place the amount of chicken that you want.  Add ranch or blue cheese dressing, cheese, and sandwich toppings.

Another Use for Ciabatta Bread

I can’t say enough good things about the bread from Bountiful Baskets.  I’ve tried almost every kind they have offered, 9 grain, honey whole wheat, whole wheat, Italian olive oil, ciabatta, sourdough, foccacia.  Plus, all of it freezes really well, or at least is has in my experience.  So, when I had a bottle of barbecue sauce that was about to expire, I wanted to make Slow Cooker BBQ Chicken and Broccoli Cheese Cornbread, but didn’t have buns and didn’t want to make a run to the store just for that.  Cue the ciabatta bread in the freezer.  I mostly have only made BLTs with it, but decided to give it a try for the BBQ chicken.  It was great.  I added a little shredded cheese to mine, my husband added some pickles.  Yum!

Each week, Bountiful Baskets usually offers some kind of bread.  9 grain bread is available pretty much every week, then sometimes other weeks there are various other types of bread that have been available, honey whole wheat, organic multi-grain, organic whole wheat, Italian olive oil, sourdough, rye, foccacia, and ciabatta.  I have bought every kind and have never been disappointed.  Best part, they freeze great.  In fact, in my freezer right now, I have 4 9 grain loaves, 1 sourdough loaf, and 2 ciabatta loaves.  Since I got iceberg lettuce and tomatoes in Bountiful Baskets over the weekend, plus turkey bacon was on sale at the commissary ($1.37 package!), so I decided it was time to use a ciabatta bread from the freezer.  BLTs.  Perfect lunch for Sunday!

What I used:

1 package turkey bacon, cooked according to package directions
1 loaf ciabatta bread, cut into 3 sections, each section cut in half lengthwise
Butter
Garlic powder
1 tomato, sliced
3 sections of iceberg lettuce, sandwich sized
Oscar Mayer Deli Fresh Rotisserie Seasoned Chicken Breast deli meat
Miracle Whip

First, I started cooking the bacon.  While that was going, I buttered the ciabatta bread and sprinkled garlic powder on it. I placed it butter sides down on a griddle on medium-low heat to toast it.  Once it was toasted, I put it on a plate, then put the chicken deli meat, bacon, tomatoes, lettuce, and Miracle Whip on, making the perfect sandwich.  If I’d had it, I would have put sliced swiss cheese on as well, but it was still good as it was.
